Does it sound like this girl is interested in me romantically?

I met this girl at a pool party a long time ago and we talked all night, but then went our separate ways. Several months ago I found her on Facebook and we started chatting. We exchanged phone numbers and started texting occasionally. I found out she has a boyfriend, but she seldom talks about him and another friend of mine said they're not doing well and have been on and off. I asked her if she wanted to talk on the phone at certain times and she always responds very positively about it, but then when I call she doesn't answer and later texts me again with an apology. Nervous maybe? I told her several days ago that I was into art and she is to, but she said she'd never had anyone to talk to about it, not even her boyfriend. I asked her if she wanted to go to Barnes and Noble tomorrow night and look at her art over coffee and then maybe get dinner and she told me she'd love to. I'll be honest, I like this girl and I feel I can do a hell of a lot better job taking care of her and making her happy than her boyfriend and there doesn't seem to be any resistance at all to spending time alone with me on her end. Most girls I know would consider dinner alone with a guy they barely know "drawing the line" or a "date situation," but perhaps that's just me. What do you all think. Does it appear she may have interest? She's a very sweet girl. I know lots of people who know her and they all say she's an angel and I haven't been pressuring her, so I know she isn't doing this just because I want to. She seems really interested.
